I honestly believe these Banana Oat Protein pancakes are just as good as regular american style pancakes! These pancakes are packed with natural protein making them a great healthy weekend breakfast when you fancy something special.

Recipe serves 2 people

Ingredients

200g fat-free cottage cheese
90g rolled oats
2 bananas
2 eggs
1 tsp vanilla extract
1 tsp ground cinnamon
Honey & nuts for garnishing (I choose chopped almonds or pecans)

You will also need a food processor

Instructions


circle Mix the following ingredients in a food processor until the mixture becomes a smooth batter; cottage cheese, rolled oats, 1 chopped banana, eggs, vanilla extract & cinnamon.

two Heat a nonstick frying pan over a medium heat. No need to add any oil.

three Spoon just short of a full ladle into the center of the pan, fry for approx 2 minutes and use a spatula to flip the pancake over to the other side and fry for approx 2 further minutes. Repeat until all the batter has been used up, you should get 6 pancakes in total.

circle (1) Stack pancakes in two sets of three and serve with sliced banana, nuts and drizzled honey.
