These chocolate peanut butter protein bars are perfect for a quick protein filled snack plus they're cheaper and much tastier than shop brought protein bars! The below recipe makes 12 bars, I make a batch every Sunday so that I have enough snacks for the forthcoming week.
80g Chocolate whey protein powder
85g Oat flour (or oats ground into a flour via food processor)
50g Rolled oats
15g Rice krispies
128g Crunchy peanut butter
1 tsp Vanilla extract
2 tbsp Milk (of your choice)
50g Dark Chocolate (at least 74% cocoa)
Put the peanut butter and honey into a microwave suitable bowl. Cook in the microwave on a high heat for two minutes. Add the vanilla extract and stir thoroughly to combine. Set aside to cool slightly and thicken.
Put the protein powder, oat flour, oats and rice krispies in a mixing bowl and stir to combine thoroughly.
Stir the wet mixture into the dry ingredients and mix thoroughly. At first the mixture may appear too dry however keep mixing and add the milk and it should become the consistency of cookie dough.
Transfer the mixture to a baking tin, spread evenly and press the mixture down firmly with clean fingers, ensuring it is packed into the tin as tight as possible (this binds the bars together).
Melt the chocolate in the microwave in a suitable bowl for 1 minute, check and cook for longer if needed.
Using a teaspoon drizzle the melted chocolate ontop of the mixture in whatever patterns you fancy.
Put the baking tray in the fridge for at least 2 hours for the mixture to set. Once set cut with a sharp knife into 12 bars.
