Over the bank holiday weekend I made these cacao protein balls. They are to be had as an energy booster and only 1 per day even though they are very moreish! Hope you enjoy making them... this is a very easy recipe.
- 2 tsps Whey protein powder (I used chocolate flavour)
- 2 tbsps fFax seeds
- 1 tsp Chia seeds
- 5 tbsps Almonds
- 2 tbsps Cacao powder
- 1 tbsp Honey
- Half a tsp Vanilla extract
- Desiccated coconut for rolling
Put the almonds and flax seeds into a small food processor and grind until it looks like flour.
Add the remaining ingredients to a mixing ball and mix together using the back of a metal spoon and pressing in a downwards motion to bind the ingredients together. This will take some work but keep going until the mixture becomes moist and is binded.
Divide the mixture into 8 balls (about 1 and a half teaspoons worth of mixture per ball).
Scatter the desiccated coconut onto a plate and roll each ball in it to coat the outside.
Enjoy! Keep in the fridge so they set together and keep up to 5 days :)
